The basis for this recipe was to make a dish which contained ingredients that had the maximum proteins, vitamins, minerals and healthy oils. That the dish became one of this cookbook’s most successful recipes and Bille’s absolute favourite luckily refutes any allegation that there is a conflict between health and pleasure. Try it! The salad is also delicious on its own, when the beans and rice are served either hot or lukewarm.

200 g white or brown dried beans, such as borlotti and/or pinto beans.

3 cloves garlic, 3–4 sprigs thyme, rosemary or sage or 2 tsp dried and vegetable stock for boiling

1 handful arame seaweed

200 g green cabbage or other cabbage

2 red peppers

3 tbsp pine kernels

400 ml brown jasmine rice or other rice

2 ripe avocadoes
